Shakshuka with homemade sauce and a lot of greens

Shakshuka is one of the most amazing, balanced and hearty breakfasts for the whole family.
This particular version of shakshuka is perfect for me. It has absolutely everything: lots of vegetables, greens, protein, great fats, spices and amazing flavor. It’s very easy to prepare. You can supplement it with different ingredients and prepare a portion for the whole family at once.
First, let’s prepare the sauce for our shakshuka. It’s very versatile. You will be able to use it for a few more days in different dishes. Quick recipe perfect homemade tomato sauce.
For shakshuka we will need:
- garlic
- celery stalks - 1 pc
- fennel - 1/2 pcs
- onion - 1/2 pcs
- bell pepper - 1/2 pcs
- any greens, lots of them! (spinach, chard, parsley, dill)
- garlic
- smoked paprika - 1 tsp
- salt and freshly ground pepper optional
Who likes spicy - add chili pepper, chipotle.
Fry all the vegetables, except for the bell pepper, in olive oil. Add black pepper so that all the ingredients open up in the hot oil and fill it with their flavors. Next, add the sweet peppers and saute lightly. At this stage, I salt the vegetables a little so that they become slightly soft. Next, pour our ready homemade tomato sauce, stew a little. We add spinach, chard, smoked paprika.
Once your tomato masterpiece is perfect - make wells and add eggs. Cover with a lid and leave for 5-7 minutes, depending on which yolk you prefer. But keep in mind - while you’re putting everything on plates - the eggs will still continue to cook in the hot sauce - so take them off the heat a little earlier.
Instead of homemade tomato sauce, you can use ready-made tomato paste to speed up the process.
Sprinkle dill, parsley, and green onions on top. Top with feta and olive oil!
Optional: sun-dried tomatoes, capers, olives, anchovies, mushrooms, tofu instead of eggs, cilantro.
Serve with your favorite cool bread, which can be toasted in the oven for crunch and rubbed with garlic for flavor. You can with chickpea gluten-free flatbread.
Vary it the way you like it. But the base with homemade sauce is my top.
