Cookies (gluten free, lactose free, vegan)

A very tasty weekend cookie. They are full of healthy fats, which we need so much for healthy skin, hair and hormone balance.
Calories in them are quite a few, so we eat one and enjoy.

You will need:

  • rice flour - 250 g
  • baking soda - 1/2 tsp.
  • salt - 1/3 tsp.
  • tahini - 100 g (sesame paste)
  • cashew paste - 100 g
  • coconut oil - 2 tbsp.
  • maple syrup - 80 g
  • dark raisins - 50 g
  • 82% bitter chocolate - 40 g
  • Maldon salt

Preheat the oven to 160 degrees.
First, in one bowl mix together the first 3 dry ingredients.
Next we need to mix the tehina, nut paste and coconut oil on a steamer so that they become a homogeneous mass. Stir until all the ingredients "become friends".

Remove from the stove and add the maple syrup and stir. Now pour all this homogeneous sweet mass into the dry ingredients. In the last turn add dark raisins.

Take a baking tray and cover it with parchment. If you have molds - you can tamp the dough in them and form cookies, if not - just make equal balls and press well on top with a glass.
Do not make the cookies too thick. Bake for 12-15 minutes.

Chop the chocolate roughly with a knife.
Once you take the tray out of the oven - sprinkle the cookies with chocolate and Maldon salt - let cool. The chocolate will float and melt, then set beautifully.

The cookies will be enjoyed by absolutely everyone in the family.
