October in Ukraine is the time when vegetables, fruits and root vegetables dominate on the tables, which are maximally saturated with vitamins and microelements. Seasonality of products not only guarantees their freshness, but also contributes to a healthy diet.

Autumn is the ideal time to harvest vegetables. Cabbage, carrots, beetroot, potatoes and onions can be found in October. Cabbage, both white and red cabbage, is used in many traditional dishes. Carrots and beetroot are rich in antioxidants, while onions add flavour and enhance the taste of dishes.

Also during this period, pumpkins ripen, which are a major symbol of autumn. As well as being brightly coloured, pumpkins are rich in vitamins A and C and are the perfect base for soups, purees and baked goods.

October is the time of harvesting the sweetest fruits, which we choose as a dessert, and also prepare with them the most delicious baked goods.

Root vegetables such as celery, parsley and parsnips are actively harvested during this period. They add deep flavours to soups and broths. As for greens, October is the time for the last harvest of dill, parsley, cilantro and spinach, which make a great addition to autumn dishes.

Mushrooms are another important element of the October menu. Forest mushrooms, such as white, chanterelles or opiata, are a source of protein and B vitamins. They become the basis for various dishes - from soups to fried and stewed delicacies.
