Gluten-free chickpea flatbread with different fillings

Chickpea flatbread is made with just 2 ingredients. Lactose free, egg free and gluten free. So for many people, these recipes are a real boon!

This chickpea flatbread recipe looks like the perfect substitute for the usual bread, tortillas and pancakes.

We’ll need:

  • 0,5 cup chickpea flour
  • 1 cup water
  • optional salt for balance

Next, it’s a matter of taste. You can add some nut flour, seed for a neutral option or freshly ground pepper, dried garlic, onion, herbs, paprika, spices for savoury flatbreads. Sometimes I may add a little olive oil to the dough. Mix everything together and let stand for 10-15 minutes. Bake the flatbreads on a dry frying pan on both sides over medium heat.

Serve with anything, really! Your flight of fancy is limitless here, for example:

  • guacamole and lightly salted fish
  • butter and caviar
  • hummus and baked vegetables
  • courgette caviar and greens
  • avocado and bryndza
  • feta and ripe tomatoes

For those with a sweet tooth:

  • coconut yoghurt with berries
  • greek yoghurt with baked apples
  • coconut yoghurt with berries
  • buckwheat honey with cinnamon and walnuts
  • walnut paste and banana
