Almond pancakes (no flour, no sugar)

Breakfast for cloudy cold weather, which is very much loved by children. Sometimes adults will also enjoy this breakfast on their day off, when there is a little more time for the family. By popular demand, this is a sweet breakfast that is gluten-free, lactose-free, and free of added sugar.
For 6 fluffy flapjacks we will need:
- 2 eggs
- 3 tbsp coconut oil (or any other oil, I prefer olive oil)
- 6 tbsp applesauce
- 1 tsp apple cider vinegar (or lemon juice)
- 130 g almond flour
- 1/2 tsp baking soda
- optional cinnamon, can be omitted
- pinch of salt
To make homemade applesauce, take sweet (important) apples, as there are no additional sweeteners in the recipe and steam them, you can pre-bake them, both options - ok. Then in a blender turn everything into a puree. If you don’t have sweet apples at home, add one date to the blender. From the resulting puree measure 6 tbsp. spoons, the rest in a jar in the fridge for a couple of days instead of sweets.
If at all on short notice, use ready-made baby puree.
Send all wet ingredients (eggs, oil, applesauce, vinegar/lemon juice) into a blender. I recommend that all ingredients be room temperature, otherwise if you use coconut oil it will start to harden and there will be unnecessary lumps.
Then add the rest of the ingredients as listed. You should get a thick batter.
I bake the fritters on a well heated cool non-stick frying pan without adding oil. Vary the shape and thickness yourself, it’s up to your taste. Turn the fritters over when bubbles appear on the surface and they have set a little. Delicately, without fanaticism and crusts 😊
Serve with plenty of fresh or frozen berries, greek or coconut yogurt.
